Sweet and Sour Collard Greens

Collards are hubby’s favorite vegetable. This is not the way I traditionally cook them, but I decided to try something new. They turned out delicious and he loved them.

I had some tomatillos in the refrigerator I purchased for a recipe I never made. I didn’t want them to go to waste so I figured I’ try adding them.

I removed the stems from about a half pound of collards, then coarsely chopped them. I also chopped the tomatillos and diced 1/4 of a large red onion.

Starting with a oil of choice (I used a large dollop of bacon fat) I sautéed the onions for 2 minutes, then add the tomatillos and collards and continued sautéing. I seasoned the vegetables with salt, garlic powder and red chili flakes to taste. It was ready when the collards wilted down and the liquid was almost gone.

I love how saucy the tomatillos made the collards, but oh man, it was tangy! I added a little natural calorie free sweetener to take the edge off a bit, it worked perfectly.
