Vegetable Soup

I used my multi cooker to quickly make some soup that doesn’t taste quickly made.

You can add any veggies to make vegetable soup but here is what I used: 

3 Leeks trimmed and sliced  

3 stalks celery sliced

6 carrots peeled and sliced

1 pint exotic mushroom blend, reg mushrooms are fine to use instead. 

2 TBSP oil - I used Avocado oil

1 qt vegetable broth

1 - 28 oz. can diced tomatoes  

1 - 14 oz. can black beans, rinsed

1 - 14 oz. can cannellini beans, rinsed

1 - TBSP dried sage

1 - TBSP dried rosemary  

1 - tsp. sea salt  

1 - tsp. chili pepper flakes

2 bay leaves  

Directions

Sauté all of the fresh veggies in oil until carrots are slightly tender. Add everything else, put on lid to multi cooker and chose soup function or cook for 20 min. If you are making it using a regular pot, simmer for 1 hour.
