Pork Chops in Alfredo Sauce
This is for the meat lovers. We eat meat two times a week, fish two times and the rest of the time veggies. We eat pork the least, next poultry, but our faves are beef and lamb (we love lamb!).
When I do make pork I try to make it special. This recipe turned out really well. I had leftover Alfredo sauce from another meal (recipe here) and decided to top the chops with it.
4 pork chops
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. thyme
2 Tbs. butter
1 pint mushrooms
After you season the chops with the salt, pepper and thyme. Brown them in the butter.
Remove the pork chops from the pan and sauté the mushrooms. Add a little broth or water if the pan dries out too much.
Add the Alfredo sauce to the pan and mix with the mushrooms, then add the chops back to the pan. Cook until the chops reach 145°F. Make sure you temp each chop, the one in the picture reads 168.4 but another only read 122°F. The minimum temp for each should be 145°F.

I served the chops along with baked sweet potatoes and roasted Brussels sprouts.
