Trader Joe’s Creamy Spinach Salmon Recipe
I have a goal of eating fish or other seafood twice a week. I love seafood; hubby on the other hand tolerates rather than loves it. I purchased a couple of different pieces of fish from Trader Joe’s to help accomplish my goal.
Wednesdays and Fridays are the designated seafood days and today is Friday! We usually grill Salmon but I was not up to going outside so I decided to try the recipe on the package
I had everything but the cream, but I did have this;
I followed the directions as stated, with just one other change other than the cream.
After mixing the ingredients and then placing the fish on top, I put a lid on the pan and brought it to a boil and then turned it down and simmered for 25 minuets. I left the lid on for 1/2 the cooking time and then removed it. The recipe didn’t say anything about a lid, but it made sense to me. I did spoon the spinach mixture on top of the salmon 3 times during the entire process.
Hubby enjoyed the fish.
