Cauliflower/Broccoli "Rice"

This recipe is super easy and cooks up super fast!
I like it a lot better than plain riced cauliflower, it has a nice zingy flavor. 

Recipe

1 head of Cauliflower
1 big bunch of Broccoli
3 TBSP of dried minced onion (if using fresh; mince half of a medium sized onion)
2 TBSP Butter (or your favorite cooking oil/fat)
Sea salt and pepper to taste

 

Finely chop your Cauliflower and Broccoli,

If you use a food processor (Hubby's preferred method) take your time, pulse so you do not chop it too finely, I prefer to do it by hand but that takes much longer.

You want to have twice as much Cauliflower as you have Broccoli. Broccoli has a peppery bite, if you use too much it will be overwhelming.

I cooked 1/2 of the recipe and put the other half away raw for another meal, we still had cooked leftovers after feeding 3.

 

Sauté the mixture in a hot pan with the butter

Add the dried minced onion and cook for 5 min then you are done. If you use fresh minced onion, sauté the onion first and then add your veggie mixture.
